Hi, Raw Wednesday!

I had mentioned a while ago that I was thinking about incorporating a high-raw day into my diet each week  Today was that day.

Started out with a smoothie full of almond milk, an apple, and a bag of frozen mixed fruit (I told you we need to go food shopping!


For late lunch/early dinner I made a salad with 2 tomatoes...
 
half an onion...
 
and a HUGE green apple!



 
I mixed that up with some grape seed oil, red wine vinegar, salt, parsley, and oregano. 
 
It was so good.  I can't even explain it.


After work (Wednesdays are my late night, so it was WELL after dinner hour) I had a non-raw treat, but it was delicious.    I took the apple butter we bought when we went apple picking and some boysenberry jam (cooked at a very low temperature according to the jar... so that still counts as raw-ish, right? ) and spread it over the cookies we made last night!! YAY!!  What a treat!!

Delicious Day

My car was in the shop so I didn't go to work this morning. BAD idea. I ate my way through the morning. It started out okay with a smoothie, but then progressed into Nutella covered cannolis. It was bad. REAL bad.

I tried to get it back on track with lunch.

After I got home from work at night I was hungry. I don't know how this is possible after all I ate, but I was. I decided to join the Banana Butter Band. 1 frozen banana plus a few scoops of peanut butter equaled WOW!

Food Shopping

As I mentioned here, our fridge had seen better days food-wise (We are trying to save as much money as possible, and so we try to go as long as possible between food shopping). Today, it was re-stocked. Re-stocked so well that the door barely closes. I am in food heaven!

With all that delicious food, what did I choose to have for lunch?


A hummus/baby greens sandwich. And let me tell you, it was delicious. Exactly what I wanted. It turned out to be a good thing I ate so lightly because John went to town on dinner.

Coconut baked chicken cutlets, mashed cauliflower, and tomato-cucumber salad. WOW!

Gifts Become Tomato-Peach-Basil Salad

After John and I visit our parents' houses we are typically loaded with lots of food goodies. This can range from a half-eaten cereal box to leftovers to fresh produce to frozen meat and poultry. Honestly, if we visited more often than our current once/week, we would never have to food shop. Which would make me sad. I love to food shop.

Anyway, our most recent visit yielded, among other things, fresh peaches and tomatoes. The tomatoes are from my mother's garden and the peaches are from the farm a friend of the family owns. As if that wasn't enough, today I happened to visit the chiropractor and he gave me a HUGE bag of basil from his garden! Score!!!

Some quick research resulted in the decision to make this recipe... Tomato-Peach-Basil Salad!
I know there are lots and lots of different versions of this salad, but I based mine off of this. I just cut up 2 tomatoes, 1 peach, a little onion, and some fresh basil, threw it together with a little kosher salt and some olive oil. TA-DA! Done! Super fast, easy, and yummy!
