Super Snack Saturday!

Most of the posts this week have been of meals, dinners to be exact, so I thought the weekend would be a good time to share some of the OTHER things we have been eating.  

Waffles with Peanut Butter/Honey/Banana Topping
Home made peanut butter, sliced bananas, and honey were thrown in a bowl...
Warmed....
And served over a toasted waffle!  The waffle was leftover from when we made them last weekend.  I just froze the extra, and when I felt like a fancier breakfast, stuck it in the toaster!


The other big snack-o-the-week is a riddle.
  
What do you get when you mix 2 apples...
a mandolin slicer...
and cinnamon?
Why, apple chips, of course!  Especially when the are baked at 250 for an hour or so!

Tuesday Treats

Starring... Egg-in-a-Hole, Leftover Lunch, and Stir-Fry Veggies with Brown Rice in Peanut Garlic Sauce!
 
Breakfast was a treat!  I never make a fancy breakfast on a weekday morning, but I thought I deserved it!
 
The bread kind of fell apart because it was getting stale, but it was still a great use of the bread and last egg.  

Lunch was a delicious leftover meal. 
 
Remember these roasted veggies from last week?   They have been in the fridge getting more and more delicious.  For lunch they were tossed with leftover macaroni from last night and a bit of butter.  
Yummy, easy, and frugal.  Go me!
Dinner was Stir-Fry Veggies with Brown Rice in Peanut Garlic Sauce.  The sauce was a gift, which is super-cool since I never buy stuff like this for myself.  
  
The ingredients weren't creepy, either.  BONUS!
 
 To start this, I made John cook rice.  

Just kidding. 

I asked him nicely.

For my part, I stir-fried a bag of frozen green-bean stir-fry in a teaspoon of coconut oil.

 
When they were just about finished, I added in the sauce. 

 
I added some soy sauce, actual whole roasted garlic cloves, and an extra spoonful of peanut butter to the sauce.  Because I can't leave well enough alone.  

 
Served over rice?
 
Perfection.

This whole meal (minus the rice) was ready in about 10 minutes.  How's THAT for a quick weeknight meal?!

PS.  I may have made cookie dough babies for dessert.  Maybe.

Macaroni Monday!


Continuing with the whole oats-in-the-morning thing, today was peanut butter and banana oatmeal.  I heated up the banana and made it all mushy and sweet.  It was really good.  



Now that I am almost totally healthy, Macaroni Monday was back!  I wanted something fast, easy, and healthy so I pulled something from here.  We had all the ingredients for "Velvety Broccoli and Feta Pasta" except the feta, so that's what I made!


I steamed a bag of frozen broccoli in 1 cube of homemade chicken broth.

While that cooked, I cut up an onion and 4 cloves of garlic.

I mixed it all together with a little olive oil and 1/4 cup of parsley and let it cook up.

While THAT cooked, I squeezed up 2 lemons and added it to the mix.

When it was all cooked I threw it in the blender.

Once mixed in with whole wheat shell macaroni?  YUMMY!
