Super Snack Saturday!

Most of the posts this week have been of meals, dinners to be exact, so I thought the weekend would be a good time to share some of the OTHER things we have been eating.  

Waffles with Peanut Butter/Honey/Banana Topping
Home made peanut butter, sliced bananas, and honey were thrown in a bowl...
Warmed....
And served over a toasted waffle!  The waffle was leftover from when we made them last weekend.  I just froze the extra, and when I felt like a fancier breakfast, stuck it in the toaster!


The other big snack-o-the-week is a riddle.
  
What do you get when you mix 2 apples...
a mandolin slicer...
and cinnamon?
Why, apple chips, of course!  Especially when the are baked at 250 for an hour or so!

Roasted Veggies

This dinner was supposed to be Roasted Veggies with Pirogies, but I got carried away with the veggies.  

We cut up pumpkin and butternut squash,
 
cauliflower and broccoli,

and then zucchini, yellow squash, and eggplant.

 Each was tossed with Grapeseed Oil, Kosher Salt, and Italian Seasonings.  

The hard part was timing each set of veggies.  
The orange veggies went in first, with some baby onions. 

 After about 15 minutes, the broccoli and cauliflower went in, with a head of garlic.

 After another 10 minutes, the last sheet went in. 

 They all cooked together for another, maybe 20 minutes.  


  
  
Then they were all mixed together in perfect harmony.


Yum.


Oh, and for dessert?  A Macintosh Apple sliced and sprinkled with cinnamon.

Hi, Raw Wednesday!

I had mentioned a while ago that I was thinking about incorporating a high-raw day into my diet each week  Today was that day.

Started out with a smoothie full of almond milk, an apple, and a bag of frozen mixed fruit (I told you we need to go food shopping!


For late lunch/early dinner I made a salad with 2 tomatoes...
 
half an onion...
 
and a HUGE green apple!



 
I mixed that up with some grape seed oil, red wine vinegar, salt, parsley, and oregano. 
 
It was so good.  I can't even explain it.


After work (Wednesdays are my late night, so it was WELL after dinner hour) I had a non-raw treat, but it was delicious.    I took the apple butter we bought when we went apple picking and some boysenberry jam (cooked at a very low temperature according to the jar... so that still counts as raw-ish, right? ) and spread it over the cookies we made last night!! YAY!!  What a treat!!

Apple Picking!

John and I went apple picking!

We also hit up a winery in the area and Warwick Applefest!

They had tomatoes too!


So much fun!
